Cheesy Ground Beef and Potato Bake: The Forgotten Comfort Food That Deserves a Comeback
There are some dishes that never quite make it into the mainstream spotlight, yet they hold an incredibly special place in the hearts of those lucky enough to have tasted them. This cheesy ground beef and potato bake is one of those hidden gems — the kind of casserole that sits quietly in a neighbor’s kitchen, filling the whole house with an irresistible aroma and leaving you thinking about it for years afterward.
Layers of tender sliced potatoes, rich seasoned ground beef in a savory tomato sauce, and a bubbling golden blanket of melted cheese make this casserole the ultimate crowd-pleaser. It is humble, hearty, and deeply satisfying — the sort of meal that disappears before you even have a chance to put the baking dish away. Once you make it, you will completely understand why.
Ingredients
- 2 pounds russet or Yukon Gold potatoes, peeled and sliced into thin rounds (about 1/4 inch thick)
- 1 1/2 pounds ground beef (80/20 blend works best for flavor)
- 1 medium yellow onion, finely diced
- 3 cloves garlic, minced
- 1 can (15 oz) crushed tomatoes
- 2 tablespoons tomato paste
- 1 teaspoon paprika
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and black pepper to taste
- 2 tablespoons olive oil
- 1 1/2 cups shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- Fresh parsley, chopped, for garnish
Method
- Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish with olive oil or non-stick cooking spray and set aside.
- Heat the olive oil in a large skillet over medium-high heat. Add the diced onion and sauté for about 3 to 4 minutes until softened and translucent. Add the minced garlic and cook for another 30 seconds until fragrant.
- Add the ground beef to the skillet, breaking it apart with a wooden spoon. Cook until fully browned, about 7 to 8 minutes. Drain any excess fat if needed.
- Stir in the crushed tomatoes, tomato paste, paprika, Italian seasoning, garlic powder, onion powder, salt, and black pepper. Let the mixture simmer over medium heat for 5 minutes, allowing the flavors to meld together and the sauce to thicken slightly. Remove from heat.
- Arrange half of the sliced potatoes in an even layer across the bottom of the prepared baking dish, slightly overlapping each slice. Season lightly with salt and pepper.
- Spoon half of the ground beef and tomato mixture over the potato layer, spreading it out evenly.
- Add the remaining potato slices in another layer on top of the beef mixture, again seasoning lightly with salt and pepper.
- Top with the remaining beef and tomato mixture, spreading it all the way to the edges of the dish so the potatoes are well covered and will steam and cook properly during baking.
- Cover the baking dish tightly with aluminum foil and bake in the preheated oven for 45 to 50 minutes, or until the potatoes are fork-tender all the way through.
- Remove the foil and sprinkle the shredded mozzarella and cheddar cheese evenly over the top of the casserole. Return to the oven uncovered and bake for an additional 15 to 20 minutes, until the cheese is fully melted, bubbly, and golden brown in spots.
- Remove from the oven and allow the casserole to rest for about 10 minutes before serving. This helps the layers set and makes it much easier to scoop out clean, beautiful servings.
- Garnish with freshly chopped parsley and serve hot straight from the baking dish.
Tips for the Best Results
Slice your potatoes as uniformly as possible so they cook evenly throughout. A mandoline slicer is a great tool for this if you have one. Thinner slices will become wonderfully tender and almost melt into the layers, while slightly thicker slices will hold their shape a bit more and give the casserole more structure.
If you want an even richer flavor, substitute half of the crushed tomatoes with a can of diced fire-roasted tomatoes. You can also add a pinch of red pepper flakes to the beef mixture if you enjoy a subtle kick of heat. For a smokier depth, try adding a teaspoon of smoked paprika in place of regular paprika.
Make It Your Own
This casserole is wonderfully versatile. You can swap the ground beef for ground turkey or ground pork depending on your preference. Adding thinly sliced bell peppers between the layers introduces a gentle sweetness and extra color. Some home cooks also like to add a thin layer of sour cream or a drizzle of heavy cream before the final cheese topping, which creates an incredibly creamy, almost gratin-like texture underneath that golden crust.
Storing and Reheating
Leftovers store beautifully in an airtight container in the refrigerator for up to 4 days.
