The Method

1- Prep and Wedge
Oven to 400°F

Preheat your oven to 400°F (205°C). Line a large baking sheet with aluminum foil for easy cleanup, and place a wire cooling rack on top of the foil. Cut each washed potato lengthwise into 8 even wedges.

2- Season the Potatoes
Infuse the flavor

In a large bowl, toss the potato wedges with the olive oil until lightly coated. In a small bowl, mix the smoked paprika, garlic powder, onion powder, brown sugar, and black pepper. Sprinkle the spice mix over the potatoes and toss until every wedge is evenly coated.

3- Wrap the Bacon
Tight and secure

Take one slice of bacon and wrap it tightly around a potato wedge in a spiral fashion, starting from one end and working your way to the other. Try to minimize heavy overlapping so the bacon cooks evenly. Place the wedge seam-side down on the wire rack. Repeat for all wedges.

4- Bake to Crispy Perfection
35 to 45 minutes

Bake on the middle rack for 35 to 40 minutes. Check the wedges—if the bacon is cooked but you want it crispier, flip the oven to broil for the final 2 to 3 minutes. Let them cool on the rack for 5 minutes before serving so the bacon sets and grips the potato.

 

The Elevating Dip: While these are spectacular on their own, pairing them with a tangy dip cuts through the richness of the bacon. Try mixing equal parts sour cream and barbecue sauce, or a quick garlic-herb aioli.
