- 1/4 cup powdered sugar
- 1 1/2 cups crushed peanut butter sandwich cookies or graham crackers

For the Topping
- 1/2 cup crushed peanut butter crackers or oat clusters
- 1/4 cup melted chocolate for drizzling
Method
- Line a large baking sheet with parchment paper and set aside.
- In a microwave-safe bowl, melt the chocolate chips with the coconut oil in 30-second intervals, stirring between each, until completely smooth and glossy. Set aside to cool slightly.
- In a separate microwave-safe bowl, combine the unwrapped caramel candies and heavy cream. Microwave in 30-second intervals, stirring in between, until the caramel is fully melted and smooth. Set aside.
- In a medium mixing bowl, stir together the peanut butter, powdered sugar, vanilla extract, and a pinch of sea salt until well combined and smooth.
- Fold the crushed peanut butter cookies or graham crackers into the peanut butter mixture until a thick, slightly crumbly dough forms.
- Using a tablespoon or small cookie scoop, portion the peanut butter mixture into small rounds and flatten slightly into thick disc shapes. Place them on the prepared baking sheet.
- Spoon a small amount of melted caramel over the top of each disc, letting it pool slightly on top.
- Using two forks, carefully dip each caramel-topped disc into the melted chocolate, coating the bottom and sides completely. Return to the parchment-lined baking sheet.
- While the chocolate is still wet, sprinkle the crushed peanut butter crackers or oat clusters generously over the top of each bite.
