Grandma’s Irresistible Cheesy Bacon Jalapeño Dip — The Recipe Everyone Goes Crazy For
There are dips, and then there are dips that make you completely lose track of time and self-control. This bubbly, golden, ultra-cheesy bacon jalapeño dip is absolutely the latter. Once it comes out of the oven — all melty and browned on top, studded with little green bits of jalapeño and smoky crumbles of bacon — good luck keeping anyone away from it. Served straight from a foil pan with a stack of buttery crackers on the side, this is the kind of recipe that gets passed down for a reason.
It’s creamy, it’s rich, it has just the right kick, and it comes together with minimal effort. Whether you’re making it for a game day spread, a holiday party, or just a cozy night in, this dip will steal the entire show. Fair warning — you will not be able to stop at just one cracker.
Ingredients
- 8 oz cream cheese, softened to room temperature
- 1 cup sour cream
- 1 cup mayonnaise
- 2 cups shredded mozzarella cheese, divided
- 1 cup shredded sharp cheddar cheese
- 6 strips bacon, cooked crispy and crumbled
- 3 to 4 fresh jalapeños, seeded and finely diced (leave some seeds for extra heat)
- 3 green onions, thinly sliced
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1/2 teaspoon onion powder
- Salt and black pepper to taste
- Ritz crackers or your favorite sturdy crackers, for serving
Method
- Preheat your oven to 375°F (190°C). Lightly grease a small foil baking pan or an oven-safe dish of similar size.
- In a large mixing bowl, beat the softened cream cheese until it is smooth and fluffy with no lumps remaining.
- Add the sour cream and mayonnaise to the cream cheese and mix well until everything is fully combined and creamy.
- Stir in one and a half cups of the shredded mozzarella, all of the cheddar cheese, the crumbled bacon, diced jalapeños, sliced green onions, and minced garlic.
- Season the mixture with the smoked paprika, onion powder, salt, and black pepper. Give it a good stir so all the flavors are evenly distributed throughout.
- Spread the mixture evenly into your prepared baking pan or dish, smoothing the top with a spatula.
- Scatter the remaining half cup of mozzarella cheese evenly over the top of the dip.
- Place the pan in the preheated oven and bake for 25 to 30 minutes, or until the dip is hot all the way through, bubbling around the edges, and beautifully golden and lightly browned on top.
- Remove from the oven and let it rest for just a couple of minutes before serving. Serve hot directly from the pan alongside plenty of crackers.
Tips for the Best Results
Make sure your cream cheese is truly softened before you start mixing — cold cream cheese will leave lumps in your dip that are difficult to smooth out. If you are sensitive to heat, remove all the jalapeño seeds before dicing. If you love serious spice, leave a good portion of the seeds in or add a pinch of cayenne pepper to the mix. For extra smoky flavor, try using smoked bacon or even a smoked gouda in place of some of the mozzarella. This dip can also be assembled a day ahead, refrigerated, and baked fresh when you’re ready to serve — making it a brilliant make-ahead option for entertaining.
Serving Suggestions
Ritz crackers are the classic go-to and they pair beautifully with the richness of this dip. You can also serve it with tortilla chips, sliced baguette, pretzel crisps, or even raw veggies like celery and bell pepper strips if you want to balance out the indulgence. No matter what you serve it with, just make sure you make enough — this one disappears fast.
