How to Make Baked Boursin Zucchini Pasta

Preheat your oven to 400°F (200°C) and grab an 8×11-inch or 9×13-inch baking dish.

Prep the baking dish

Toss the sliced zucchini in your baking dish with the olive oil, a pinch of salt, and freshly cracked black pepper. Make a well in the center of the pan and place the unwrapped wheel of Boursin cheese right in the middle.

25–30 minutes

Bake at 400°F uncovered for 25 to 30 minutes. The zucchini should be tender and lightly browned around the edges, and the Boursin should be soft, warm, and golden on top.

While the dish roasts, bring a large pot of salted water to a boil. Cook your pasta according to package directions until al dente. Before draining, scoop out 1/2 cup of starchy pasta water and set it aside.

Remove the baking dish from the oven. Use a fork or spoon to mash the warm Boursin, stirring it directly into the roasted zucchini and rendered juices. Chef’s Tip: Do not skip reserving that pasta water! The starch in the boiling water is the crucial element that emulsifies the melted Boursin into a silky, smooth sauce rather than a clumpy glaze.
