Slow Cooker Teriyaki Chicken and Broccoli

How to Make It

1
Build the Sauce in the Slow Cooker
5 minutes

In the bottom of your slow cooker, whisk together the soy sauce, honey, brown sugar, rice vinegar, minced garlic, grated ginger, and sesame oil until smooth.

2
Slow Cook the Chicken
3-4 hrs High or 6-7 hrs Low

Nestle the chicken thighs into the sauce, turning once to coat. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until the chicken is cooked through and tender.

3
Shred or Dice & Thicken
5 minutes

Remove the chicken to a cutting board and cut into bite-sized pieces or shred with two forks. Whisk the cornstarch slurry directly into the hot liquid remaining in the slow cooker. Cover and cook on HIGH for 10–15 minutes until the sauce thickens into a glossy glaze.

4
Add Chicken & Steam Broccoli
20-25 minutes

Return the chicken to the slow cooker and toss to coat in the glaze. Layer the fresh broccoli florets right on top. Cover and cook on HIGH for another 20–25 minutes, or until the broccoli is bright green and tender-crisp.

Tips for the Ultimate Teriyaki Bowl

Pro-Tip on Broccoli: Always avoid adding broccoli at the beginning of slow cooking—it will turn gray and mushy. Adding it during the final 20 minutes uses the trapped steam in the pot to cook it to a bright, vibrant bite.

  • Garnish Like a Pro: Serve immediately over jasmine rice, brown rice, or quinoa. Top with toasted sesame seeds and sliced green onions for fresh crunch.

  • Meal Prep Friendly: This dish reheats beautifully for weekday lunches. Store leftover chicken, broccoli, and sauce together in airtight containers for up to 4 days in the fridge
