Step-by-Step Instructions
1. Prep the Oven and Your Bundt Pan
Preheat your oven to 350°F (175°C). Bundt cakes are notorious for sticking, so preparation is key. Generously grease the interior of a 10-to-12-cup Bundt pan with non-stick baking spray (the kind that contains flour), ensuring you coat every single nook and cranny.
2. Whisk the Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking soda, and salt until completely combined. Set aside.
3. Bloom the Cocoa
In a medium saucepan over medium heat, combine the 2 sticks of butter, brewed coffee (or water), and the ½ cup of cocoa powder. Bring the mixture to a gentle boil, stirring constantly. Once it bubbles and the butter is completely melted into a smooth chocolate liquid, remove the pan from the heat. Pour this hot chocolate mixture directly over your dry flour mixture and stir gently with a spatula until just combined.
4. Add the Dairy and Bake
In a small bowl, quickly whisk together the sour cream, eggs, and vanilla extract. Fold this mixture into your chocolate batter until smooth and uniform. Pour the silky batter into your prepared Bundt pan.
Bake for 40 to 45 minutes. You will know it is done when a long toothpick inserted into the deepest part of the cake comes out clean or with just a few moist crumbs attached. Let the cake cool inside the pan for exactly 10 minutes, then carefully invert it onto a wire rack or a serving platter to cool completely.
5. Pour the Warm Fudge Icing
Do not make the icing until the cake is out of the pan and ready to be glazed. In a clean saucepan over medium heat, combine the remaining stick of butter, ¼ cup of cocoa powder, and ⅓ cup of milk. Bring to a boil, stirring constantly, then remove from the heat.
Whisk in the powdered sugar and vanilla extract until the icing is completely smooth, glossy, and free of lumps. If you love a classic Texas crunch, fold in the chopped pecans now. Immediately pour the warm icing generously over the top of the cake, letting it cascade down the beautiful ridges and fill the center hole.
Let the icing set for about 15 minutes to form its signature delicate crust before slicing and serving
