I Made This Cake on a Whim, and Now My Family Won’t Stop Asking for It — Wait Until You See the Gooey Topping!
It started as one of those lazy Sunday afternoons when I just wanted something sweet — but didn’t feel like going grocery shopping. I looked around the kitchen, found a few basic ingredients, and decided to “wing it.” What came out of the oven, however, was nothing short of a miracle: a soft, buttery cake topped with a golden, gooey layer that my family can’t stop talking about.
Here’s exactly how you can make it.
Ingredients
For the cake base:
-
1 cup all-purpose flour
-
½ cup sugar
-
1 teaspoon baking powder
-
A pinch of salt
-
½ cup milk
-
1 egg
-
1 teaspoon vanilla extract
-
¼ cup melted butter
For the gooey topping:
-
½ cup brown sugar
-
2 tablespoons butter
-
2 tablespoons milk or cream
-
½ teaspoon vanilla extract
-
A small handful of chopped nuts (optional, but highly recommended)
Step-by-Step Method
Step 1: Prepare the Batter
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
In another bowl, combine the milk, egg, vanilla, and melted butter. Pour the wet mixture into the dry ingredients and stir until smooth. The batter should be thick but pourable.
Step 2: Bake the Base
Grease a small round baking pan (about 8 inches). Pour in the batter and smooth the surface with a spatula.
Bake at 350°F (175°C) for about 25 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
Step 3: Make the Gooey Topping
While the cake bakes, prepare the topping.
In a small saucepan, melt butter over medium heat. Add brown sugar and milk, stirring constantly until the sugar dissolves completely and the mixture begins to bubble.
Remove from heat and stir in vanilla extract. If you love crunch, add the chopped nuts at this stage.
