Candied Bacon Crackers

The Step-by-Step Method

To get that perfect shatter-crisp texture without any greasy mess, a low-and-slow baking method on a wire rack is the secret.

1- Prep the Station
10 min

Preheat your oven to 250°F (120°C). Line a large, rimmed baking sheet completely with aluminum foil for easy cleanup, then place an oven-safe wire cooling rack directly inside the baking sheet.

2- Wrap the Crackers
10 min

Lay your club crackers out in a single layer on the wire rack, leaving a tiny bit of space between each one. Cut your strips of bacon into thirds. Take one piece of bacon and wrap it lengthwise around a cracker. Secure it gently so the ends overlap slightly on the underside. Repeat until all crackers are wrapped.

3- The Candied Coating
5 min

In a small bowl, mix the brown sugar with the cayenne or black pepper. Generously spoon the sugar mixture over the top of each bacon-wrapped cracker. Use the back of the spoon or your fingers to pat the sugar down so it adheres to the bacon.

4- The Low and Slow Bake
45-60 min

Place the baking sheet in the oven and bake for 45 to 60 minutes. You want the bacon to turn a deep reddish-brown and look completely crisp, while the sugar melts into a bubbling, glossy glaze. Keep an eye on them during the last 10 minutes to ensure the sugar doesn’t scorch.

Pro-Tip: Let the crackers cool on the wire rack for at least 10 to 15 minutes before serving. As the melted brown sugar cools, it hardens into a spectacular, brittle candy shell. If you try to eat them hot out of the oven, the glaze will be molten and the crackers won’t have reached their maximum crunch!

Fun Recipe Variations

Once you master the base recipe, you can easily tweak the flavors to match the vibe of your gathering:

  • The Maple-Glazed Twist: Brush a tiny drop of pure maple syrup onto the bacon before adding the brown sugar layer.

  • The Sweet & Savory Herbed Version: Mix a pinch of garlic powder and dried rosemary into the brown sugar for an earthy, savory depth.

  • The Southern BBQ Flip: Dust the bacon with your favorite smoky BBQ rub before applying the sugar.
