How to Make It

Prep and preheat

Preheat your oven to 350°F (175°C). Grease a baking dish with cooking spray or butter and set aside.

Mix the cake batter

In a large mixing bowl, combine the cake mix, lime gelatin powder, vegetable oil, water, lime juice, and eggs. Beat on medium speed for about 2 minutes until smooth and well blended.

Bake to perfection
30–35 min

Pour the batter into your prepared baking dish and smooth the top. Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and allow to cool on a wire rack for 15 minutes.

Whisk the lime glaze

While the cake cools slightly, beat the softened cream cheese in a bowl until smooth. Whisk in the powdered sugar and of lime juice until a thick, pourable glaze forms.

Glaze and garnish

Pour the glaze evenly over the warm cake, spreading it out to the edges with a spatula. Top generously with freshly grated lime zest. Slice and serve warm or chilled!

Chef’s Tips for Success

  • Key Limes vs. Regular Limes: Key limes are smaller and slightly more aromatic with a tart floral note. If you can’t find fresh Key limes or bottled Key lime juice, standard fresh Persian limes work wonderfully as a substitution!

  • Poke Cake Option: For an even moister cake, poke small holes all over the top of the warm cake with a fork before pouring the glaze so it seeps deep into every bite.

  • Storage: Cover the cooled cake tightly with foil or plastic wrap and store in the refrigerator for up to 5 days. It tastes even better served chilled the next day
