How to Make German Honey Bars

Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal, and lightly grease.

Warm the honey mixture
5 minutes

In a medium saucepan over low heat, combine the honey, granulated sugar, and butter. Stir gently until the butter melts and the sugar dissolves (do not boil). Remove from heat and let cool until just lukewarm.

Mix dry ingredients & combine
3 minutes

In a large bowl, whisk together the flour, baking soda, cinnamon, cloves, ginger, nutmeg, and salt. Whisk the room-temperature egg and lemon zest into the cooled honey mixture, then pour it into the dry ingredients. Stir with a spatula until a thick, sticky dough forms. Fold in the sliced almonds.

Spread in the pan
2 minutes

Transfer the sticky dough to your prepared 9×13-inch pan. Using offset spatula or greased hands, press the dough evenly into all four corners of the pan.

Bake & glaze
18–22 minutes

Bake at 350°F for 18 to 22 minutes until golden brown and a toothpick inserted in the center comes out clean. Whisk the powdered sugar and fresh lemon juice together in a small bowl until smooth. Pour the glaze over the hot bars as soon as they come out of the oven, spreading it evenly. Top with extra lemon zest and let cool completely in the pan.

Baker’s Secret: Don’t rush to eat them all on day one! Like traditional German Lebkuchen, these honey bars absorb moisture from the lemon glaze as they sit. Store them in an airtight container for 24 hours before serving for maximum softness and deep spice flavor.

  • Dark Chocolate Drizzle: Drizzle 1/2 cup of melted dark chocolate over the set lemon glaze for a classic fruit-spice-chocolate combination.

  • Candied Peel Addition: Fold 1/3 cup of finely chopped candied orange or lemon peel (Zitronat) directly into the batter with the almonds
