Grease the interior of your 5- to 7-quart slow cooker with non-stick cooking spray. Lay the chicken breasts in a single, even layer at the bottom of the slow cooker insert.
2. Layer the Ham and Cheese
Lay the deli ham slices directly over the chicken breasts, covering them completely. Next, place the Swiss cheese slicesover the ham layer.
3. Add the Creamy Sauce and Stuffing
Spread the cream of chicken soup evenly over the cheese layer. (If you prefer a thinner sauce, whisk 2 tablespoons of milk or chicken broth into the soup before spreading). Top everything evenly with the dry stuffing mix. If desired, drizzle 1/4 cup of melted butter over the dry stuffing to help it brown and soften nicely as it steams.
4. Cover and Slow Cook
Place the lid on the slow cooker and cook on LOW for 4 to 5 hours (or HIGH for 2 to 3 hours) until the chicken reaches an internal temperature of 165°F (74°C) and is tender.
