Sticky BBQ Glazed Meatballs That Steal the Show at Every Cookout
There is something almost magical about a platter of glossy, caramelized meatballs sitting on a table at a backyard cookout. They disappear faster than anything else, and for good reason. These sticky BBQ glazed meatballs are the kind of appetizer that stops people mid-conversation the moment they pop one in their mouth. Juicy on the inside, lacquered with a sweet and smoky sauce on the outside, and finished with those gorgeous caramelized edges that tell you something seriously delicious happened in that oven.
Whether you are hosting a summer cookout, a game day gathering, or just need a crowd-pleasing appetizer that practically makes itself, this recipe delivers every single time. The sauce is a beautiful balance of tangy, sweet, and smoky, and it clings to every meatball like it was born to be there. Make a double batch. Trust us on that one.
Ingredients
- 2 pounds ground beef (80/20 blend works best)
- 1/2 cup breadcrumbs
- 1/4 cup whole milk
- 1 large egg
- 3 cloves garlic, minced
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1 teaspoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried Italian seasoning
For the Sticky BBQ Glaze
- 1 cup your favorite BBQ sauce
- 1/3 cup grape jelly or cherry preserves
- 2 tablespoons brown sugar
- 1 tablespoon apple cider vinegar
- 1 teaspoon hot sauce (optional, for a little kick)
- 1/2 teaspoon garlic powder
Method
- Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with foil and lightly grease it or place a wire rack on top for even browning.
- In a small bowl, combine the breadcrumbs and milk. Let them sit together for about 2 minutes to create a panade. This keeps the meatballs tender and moist from the inside out.
- In a large mixing bowl, combine the ground beef, soaked breadcrumbs, egg, minced garlic, onion powder, smoked paprika, Worcestershire sauce, salt, pepper, and Italian seasoning. Mix everything together with your hands just until combined. Do not overwork the meat or the meatballs will turn tough.
- Using a cookie scoop or tablespoon, roll the meat mixture into balls about 1.5 inches in diameter. Place them evenly spaced on your prepared baking sheet.
- Bake the meatballs for 18 to 20 minutes until they are cooked through and starting to brown on the outside.
- While the meatballs bake, make the glaze. In a medium saucepan over medium heat, combine the BBQ sauce, grape jelly, brown sugar, apple cider vinegar, hot sauce, and garlic powder. Stir everything together and let the sauce simmer for about 5 to 7 minutes, stirring occasionally, until it thickens slightly and becomes glossy.
- Once the meatballs are out of the oven, transfer them to a large baking dish or oven-safe skillet. Pour the warm glaze all over the meatballs and toss gently to coat every single one.
- Return the glazed meatballs to the oven and bake for an additional 10 to 15 minutes, spooning extra sauce over them halfway through. The edges should caramelize beautifully and the glaze should look deeply lacquered and sticky.
- Remove from the oven and let them rest for 5 minutes before serving. Pile them high in a serving dish and watch them vanish.
Tips for the Best Results
Do not skip the panade step. Soaking the breadcrumbs in milk before adding them to the meat is the secret to meatballs that stay tender even after time in the oven. Cold hands also help when rolling the balls, so wet your hands slightly with cold water between batches to keep the meat from sticking and warming up too fast.
If you want even more caramelization, switch your oven to broil for the last 2 to 3 minutes. Keep a close eye on them though because the sugary glaze can go from perfectly charred to burnt quickly. Those dark caramelized spots you see in the photo are actually the best bites of the whole platter.
Make It Ahead
These meatballs are an incredible make-ahead dish. You can bake the plain meatballs up to two days in advance, store them in the refrigerator, and then toss them in the sauce and finish them in the oven the day of your event. They also reheat beautifully in a slow cooker on low, which makes them perfect for keeping warm throughout a long gathering without drying out.
