Cranberry Rice Pudding Bake: The Christmas Dessert That Stole the Show
It does not look like a pie. It does not behave like a pie. But somehow, this bubbling, golden-topped cranberry rice pudding bake has become the most requested dessert at the holiday table every single year. Skeptics become believers after just one bite, and that creamy, lightly sweet interior dotted with jewel-bright cranberries is impossible to resist once you know what you are eating.
This is the kind of dish that earns its place on the menu through sheer deliciousness rather than appearances. Baked until the top is deeply caramelized and the inside is soft, custardy, and fragrant, it sits somewhere beautifully between a classic rice pudding and a baked casserole. Serve it warm straight from the dish and watch it disappear completely before the night is over.
Ingredients
- 2 cups cooked white rice, slightly cooled
- 3 large eggs, beaten
- 1 and 1/2 cups whole milk
- 1/2 cup heavy cream
- 3/4 cup granulated sugar
- 1 teaspoon pure vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon freshly grated nutmeg
- 1/4 teaspoon salt
- 1 cup dried cranberries or fresh cranberries
- 2 tablespoons unsalted butter, melted, plus extra for greasing
- Zest of one orange, optional but highly recommended
Method
- Preheat your oven to 350 degrees Fahrenheit. Grease a 9×13 inch glass baking dish generously with butter and set it aside.
- In a large mixing bowl, whisk together the beaten eggs, whole milk, heavy cream, sugar, vanilla extract, cinnamon, nutmeg, and salt until the mixture is smooth and fully combined.
- Stir in the cooked rice, making sure to break up any clumps so that every grain gets coated in the custard mixture.
- Fold in the cranberries and the orange zest if you are using it. The orange zest adds a bright, festive lift that pairs beautifully with the tart cranberries.
- Pour the mixture evenly into your prepared baking dish. Drizzle the melted butter over the top of the entire surface.
- Bake uncovered for 55 to 65 minutes, until the top is deeply golden and caramelized in places and the center is just set with a very slight wobble when you shake the dish gently.
- Remove from the oven and allow to rest for at least 10 minutes before serving. This helps it set up slightly and makes it easier to scoop into serving bowls.
- Serve warm on its own or with a light dusting of powdered sugar and a small dollop of whipped cream on the side.
Tips for Making It Perfect
Using day-old rice actually works beautifully here because it absorbs the custard mixture more readily than freshly cooked rice. If you only have fresh rice, spread it on a baking sheet for a few minutes to let the excess steam escape before mixing it in.
For a larger crowd, simply double the recipe and use two baking dishes. The bake time remains essentially the same, so there is very little extra effort involved. Given how fast this disappears at a holiday gathering, making two from the very start is honestly always the right call.
Make It Your Own
Fresh cranberries will give you a slightly more tart and jammy result as they burst during baking, while dried cranberries add chewiness and a deeper sweetness. Both work wonderfully depending on your preference. You can also swap dried cranberries for a mix of golden raisins and dried cherries for a slightly different flavor profile that still feels festive and wintery.
