Cheesy Baked Cauliflower in Creamy White Sauce — Heaven on a Plate
Some dishes have a way of stopping a table full of people mid-conversation, and this cheesy baked cauliflower is absolutely one of them. Golden on top, impossibly creamy underneath, and bubbling with rich, velvety white sauce, it’s the kind of comfort food that makes everyone reach for seconds — and yes, even fight over the last piece.
Whether you’re serving this as a show-stopping side dish or a satisfying vegetarian main, this recipe delivers every single time. The cauliflower becomes wonderfully tender as it bakes, soaking up all that luscious cheese sauce while the tops turn beautifully bronzed and caramelized. Fresh thyme scattered throughout adds an earthy, aromatic lift that keeps every bite feeling bright rather than heavy.
Ingredients
- 1 large head of cauliflower, cut into large florets
- 3 tablespoons unsalted butter
- 3 tablespoons all-purpose flour
- 2 cups whole milk, warmed
- 1/2 cup heavy cream
- 1 1/2 cups shredded Gruyère cheese (or a mix of Gruyère and mozzarella)
- 1/2 cup grated Parmesan cheese, plus extra for topping
- 2 cloves garlic, finely minced
- 1 teaspoon Dijon mustard
- 1/2 teaspoon onion powder
- Salt and freshly ground black pepper, to taste
- 1 tablespoon fresh thyme leaves (plus extra for garnish)
- A pinch of nutmeg
- Olive oil, for drizzling
Method
- Preheat your oven to 400°F (200°C). Lightly grease a medium-sized baking dish and set aside.
- Bring a large pot of salted water to a boil. Add the cauliflower florets and parboil for about 5 minutes until just slightly tender but still holding their shape. Drain well and pat dry with a clean kitchen towel.
- In a medium saucepan over medium heat, melt the butter. Add the minced garlic and cook for about 60 seconds until fragrant, stirring constantly so it doesn’t burn.
- Whisk in the flour and cook for 1 to 2 minutes, stirring continuously, to create a smooth roux and cook out the raw flour taste.
- Gradually pour in the warm milk, whisking constantly to avoid lumps. Once the mixture is smooth and beginning to thicken, stir in the heavy cream.
- Reduce the heat to low and stir in the Gruyère, most of the Parmesan, Dijon mustard, onion powder, nutmeg, and fresh thyme. Season generously with salt and pepper. Stir until the cheese is fully melted and the sauce is silky smooth.
- Arrange the parboiled cauliflower florets snugly in your prepared baking dish. Pour the warm cheese sauce evenly over and around the florets, making sure every piece is coated and the sauce settles into all the gaps.
- Scatter the remaining Parmesan over the top and drizzle lightly with olive oil. Add a few extra thyme sprigs if desired.
- Bake in the preheated oven for 25 to 30 minutes, until the top is deeply golden and bubbling around the edges. For an even more caramelized finish, switch to the broiler for the last 3 to 4 minutes — watch it closely.
- Remove from the oven and allow to rest for 5 minutes before serving. Garnish with fresh thyme and serve straight from the baking dish while gloriously hot and gooey.
Tips for the Best Results
Make sure you dry the cauliflower thoroughly after parboiling. Any excess moisture will thin out your sauce and prevent that gorgeous golden crust from forming on top. Don’t rush this step — a good pat dry makes a real difference.
If you want to dial up the flavor even further, try adding a handful of caramelized onions beneath the cauliflower before pouring over the sauce. They melt into the dish during baking and add a wonderful sweetness that pairs beautifully with the sharp, nutty cheese.
Leftovers reheat well in the oven at 350°F covered with foil for about 15 minutes. Though honestly, in most households, leftovers are rarely an issue with this one.
