1- Prep your workstation

Preheat your oven to 350°F (177°C). Line a large rimmed baking sheet with parchment paper or a silicone baking mat. This keeps the cheese from sticking and burning on the pan.

2- Mix the base

In a large bowl, combine the 2 cups of Bisquick, 1 lb of uncooked sausage, and 4 cups of shredded cheddar (plus any optional spices). Use your hands to knead the mixture together like bread dough. It will look dry at first, but keep working it—the moisture from the sausage will gradually hydrate the baking mix. If it absolutely refuses to come together after a few minutes, add milk 1 tablespoon at a time.

3- Roll into bites

Scoop up the mixture and roll it into 1-inch balls (roughly the size of a walnut). For consistency, a small cookie scoop works beautifully. Place them on your prepared baking sheet, leaving about half an inch of space between each ball.

4- Bake until golden

Bake for 20 to 25 minutes until the tops are beautifully browned and the sausage is fully cooked through. The internal temperature should read 160°F (71°C) if checked with a meat thermometer.

You can roll the raw mixture into balls, freeze them solid on a baking sheet, and then transfer them to a zip-top bag. When company arrives, just bake them straight from the freezer—just add an extra 3 to 5 minutes to the total baking time
