I made these Chocolate Caramel Pecan Turtles once, and now they’re an absolute family favorite. Crunchy pecans, gooey caramel, and a rich chocolate shell combine into bite-sized treats that are as fun to make as they are to eat.
Here’s how to make them step by step.
Ingredients
For the Base & Crunch:
-
2 cups whole pecans (about 24–28 for clusters, plus extra for garnish)
For the Gooey Caramel Center:
-
1 (11 oz) bag soft caramel candies, unwrapped
-
2 tablespoons heavy cream or whole milk
For the Chocolate Shell:
-
1 ½ cups high-quality semi-sweet or dark chocolate chips
-
1 teaspoon coconut oil or shortening (for a smooth, shiny finish)
-
Flaky sea salt, for garnish (optional)
Step-by-Step Method
Step 1: Prep Your Station
Line a large baking sheet with parchment paper or a silicone mat.
Arrange the pecans in small clusters of 3–4 nuts each, forming a “turtle” shape — one pecan for the body and 2–3 as the legs.
Step 2: Create the Caramel
In a microwave-safe bowl, combine the unwrapped caramels and heavy cream.
Microwave in 30-second bursts, stirring after each, until smooth and fully melted (about 1.5–2 minutes total).
Stovetop alternative: Melt together in a small saucepan over low heat, stirring constantly.
