Instructions
1. Prep the Pecans

Line a baking sheet with parchment paper or a silicone mat.

Toast Pecans (Recommended): Spread the pecans on a dry baking sheet and toast in a oven for 5 to 7 minutes until fragrant. Let them cool.

Form the Clusters: Arrange the cooled pecans into small “clusters” or mounds on the lined baking sheet, using about 5 to 7 halves per cluster. Leave space between each cluster.
2. Prepare the Caramel

Melt Caramels: Unwrap the caramel candies and place them in a microwave-safe bowl with the heavy cream or milk.

Microwave in 30-second intervals, stirring between each, until the caramel is completely melted and smooth (about 1.5 to 2 minutes total). If using prepared caramel sauce, you may only need to warm it slightly.
3. Caramelize the Turtles

Using a spoon, drizzle or drop a generous amount of the melted caramel mixture over each pecan cluster, ensuring the caramel runs down and holds all the nuts together. You should completely coat the center of the cluster.

Allow the caramel-coated clusters to set for about 15 to 20 minutes at room temperature, or briefly in the refrigerator, until the caramel is firm enough to handle.
4. Temper the Chocolate

Place the chopped chocolate (and coconut oil/shortening, if using) in a microwave-safe bowl.

Microwave in 30-second intervals, stirring well after each, until the chocolate is smooth and fully melted.
5. Finish and Garnish

Dip or Drizzle: There are two ways to finish:

Full Dip: Use a fork to dip the entire caramel-pecan cluster into the melted chocolate, coating the bottom and sides, then return it to the parchment paper.

Drizzle (as shown in the image): Place the pecan cluster on the parchment paper and use a spoon or piping bag to drizzle a generous layer of chocolate over the top, allowing it to run down the sides.

Garnish: Immediately after applying the chocolate, sprinkle each candy with a few grains of flaky sea salt and optionally press a few extra pecan pieces onto the wet chocolate for decoration (as seen in the image).

Set: Allow the chocolate to fully set, either at room temperature for a couple of hours or in the refrigerator for about 30 minutes.
🎁 Storage and Gifting

Storage: Store the finished Turtle candies in an airtight container at room temperature for up to two weeks. Avoid storing them in the refrigerator, as the condensation can cause the chocolate to “sweat” or bloom.

Gifting: Layer the candies between sheets of wax paper in a decorative tin or box for a professional-looking, homemade holiday gift!
