Grandma’s 3-Ingredient Smothered Pork Chops: Pure Comfort in Every Bite
Some recipes don’t need a long list of fancy ingredients to be absolutely unforgettable. This dish is proof of that. Golden-seared pork chops nestled in a rich, creamy onion gravy — baked low and slow until everything melts together into something that feels like a warm hug from the past. It’s the kind of meal that stretches a little into a lot, feeding a family with love and simplicity.
Whether you grew up eating something just like this or you’re discovering it for the first time, this recipe is going to earn a permanent spot in your weekly rotation. It takes almost no effort, uses ingredients you likely already have, and delivers a depth of flavor that makes it hard to believe there are only three things in the pan.
Ingredients
- 4 to 6 bone-in or boneless pork chops (about 3/4 to 1 inch thick)
- 1 packet (10.5 oz) cream of mushroom or cream of onion condensed soup
- 2 large yellow onions, thinly sliced
Optional Seasoning
- Salt and black pepper to taste
- A drizzle of oil or a pat of butter for searing
Method
- Preheat your oven to 350°F (175°C). Lightly grease a baking dish and set it aside.
- Season the pork chops generously on both sides with salt and plenty of black pepper.
- Heat a skillet over medium-high heat with a small amount of oil or butter. Sear the pork chops for about 2 to 3 minutes per side until they develop a deep golden-brown crust. You are not cooking them through at this stage — just building flavor.
- While the chops are searing, scatter the sliced onions across the bottom of your prepared baking dish to create a soft bed for the meat.
- Lay the seared pork chops on top of the onion layer in a single layer.
- In a small bowl, mix the condensed soup with about half a can of water and stir until smooth. Pour this creamy mixture evenly over the pork chops and onions, making sure everything is well coated.
- Cover the dish tightly with aluminum foil and bake for 1 hour to 1 hour and 15 minutes, until the pork is fully cooked and tender and the gravy has thickened beautifully around the onions.
- Remove from the oven and let it rest for a few minutes before serving. Spoon that gorgeous creamy onion gravy generously over each chop when plating.
What to Serve It With
This dish is practically begging to be served over a mound of creamy mashed potatoes, which will soak up every drop of that savory gravy. Egg noodles, white rice, or even a thick slice of crusty bread work just as beautifully. Add a simple steamed vegetable on the side and dinner is done.
Tips for the Best Results
Don’t skip the sear. That golden crust on the outside of each chop adds a layer of flavor that carries through the entire dish once it bakes in the oven. Also, the thicker your pork chops, the more tender and juicy they will be after their long, slow bake in that creamy sauce. Thin chops can dry out, so aim for at least three quarters of an inch if you can.
Leftovers reheat wonderfully the next day, and some people swear the flavor gets even better overnight as everything continues to meld together. Store in an airtight container in the refrigerator for up to three days.
