Ingredients

- 1.5 pounds small red potatoes, halved or quartered depending on size
- 1 to 1.5 pounds smoked ham, cut into generous chunks (a ham hock also works beautifully)
- 3 to 4 cups chicken broth or water seasoned with salt and black pepper to taste

- 1 small onion, roughly chopped
- 3 cloves garlic, minced
- A pinch of crushed red pepper flakes for a little warmth
- A pat of butter stirred in at the end for richness
