Homemade Dulce de Leche: The 3-Ingredient Magic You Never Knew You Needed
Some recipes are so simple they almost feel like a trick. This is one of them. All it takes is a can of sweetened condensed milk, a roasting pan, and a little patience from your oven — and what comes out the other side is a gloriously rich, golden, creamy dulce de leche that will have everyone around the table asking you for the recipe. The secret? Baking the condensed milk low and slow in a water bath until it transforms into something that tastes like it came straight from a professional kitchen.
This method is incredibly easy, deeply satisfying, and endlessly versatile. Spread it on toast, drizzle it over ice cream, use it as a cake filling, or simply eat it by the spoonful — we won’t judge. Here is everything you need to know to make it at home.
Ingredients
- 1 can (14 oz) sweetened condensed milk
- Hot water (enough to fill the outer roasting pan halfway)
- A pinch of flaky sea salt (optional, but highly recommended)
Equipment You Will Need
- One small baking dish or loaf pan (to pour the condensed milk into)
- One larger roasting pan (to create a water bath)
- Aluminum foil
- Oven
Method
- Preheat your oven to 425°F (220°C).
- Pour the entire can of sweetened condensed milk into a small baking dish or loaf pan. Spread it out evenly.
- If using, sprinkle a small pinch of flaky sea salt over the top for a salted caramel twist.
- Cover the small baking dish tightly with aluminum foil so no steam escapes during baking.
- Place the covered dish inside the larger roasting pan. Carefully pour hot water into the outer roasting pan until the water reaches about halfway up the sides of the smaller dish. This water bath is what gently and evenly transforms the condensed milk into dulce de leche.
- Carefully transfer the entire setup to the preheated oven and bake for approximately 60 to 90 minutes. Check at the 60-minute mark. The condensed milk should be turning a beautiful golden caramel color. If you prefer a deeper, richer flavor, leave it for the full 90 minutes.
- Once done, remove from the oven and carefully lift the small dish out of the water bath. Remove the foil and whisk the dulce de leche until it is smooth and creamy — it will look thick and luscious.
- Allow to cool slightly before transferring to a jar or serving. It will thicken further as it cools.
How to Use Your Dulce de Leche
This golden spread is unbelievably versatile. Use it as a dip for apple slices, swirl it into brownies before baking, dollop it onto waffles or pancakes, fill sandwich cookies with it, or layer it into a no-bake cheesecake. It also makes a stunning topping for vanilla ice cream or a warm crepe.
How Long Does It Keep?
Store your homemade dulce de leche in a sealed jar in the refrigerator for up to two weeks. When you are ready to use it, simply let it sit at room temperature for a few minutes or gently warm it in the microwave in short intervals, stirring between each one, until it reaches the perfect drizzleable consistency.
Tips for Success
Make sure the foil is sealed tightly over the small baking dish — this traps steam and helps the condensed milk cook evenly. Always keep an eye on the water level in the outer pan during baking and add more hot water if needed. Never let the outer pan run dry. And whatever you do, do not skip the resting and whisking step at the end. That is what gives you the silky smooth texture that makes this recipe truly special.
