
Ingredients:
One pound kielbasa sausage, cut into strips.
2 cloves of freshly minced garlic.
One tablespoon of olive oil.
One diced small yellow onion.
Half a cup of finely sliced celery.
Two large carrots peeled and cut into cubes.
Four cups of Chicken Stock.
1 ½ pounds of diced potatoes.
Half a cup of shredded Parmesan Cheese.
Two cups of milk.
Two cups of shredded Cheddar Cheese.
1/4 cup of chopped roughly Parsley,
Salt and Pepper.
Instructions:
Step 1
To start, heat the olive oil over medium-high heat in a large Dutch, then add the sliced sausage and cook for about 5-6 min.
Step 2
Then, take the sausage out of the Dutch oven and set it to the mark, add onions, carrots, garlic, and celery in the same saucepan, and cook for about 2 min of time.
Step 3
After that, add the chicken broth and the potatoes, then bring to a boil, reduce the heat to low, cover, and cook for about 15 minutes.
Step 4
In this step, add the kielbasa back to the pot and add the milk, salt and pepper, Parmesan cheese, and cheddar cheese.
Step 5
Next, stir well, and over medium-low heat, cook for an additional 10 min until the cheese melts.
Step 6
Finally, take off from the heat and garnish with the chopped parsley.
