THE INGREDIENTS LIST:
250 grams.Of all-purpose flour.
2 large eggs.
1 Cup.Of granulated sugar.
1/2 Cup.Of softened butter.

1 Cup.Of crushed pineapple, drained.

INSTRUCTIONS:
Step 1
Start by heating the oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan with parchment paper to facilitate removal and whisk together the all-purpose flour, baking powder, baking soda, and salt in a medium basin. Set aside.

Cream the softened butter and granulated sugar until fluffy in a sizable mixing bowl. For this stage, you can use a manual mixer or a stand mixer.

Add the eggs one by one, beating thoroughly after each addition. Stir in the vanilla extract then.

Gradually add the dry ingredients to the butter mixture, alternating with the pineapple juice and buttermilk. Start and finish with powdered ingredients. Mix just until combined, taking care not to overmix.

To ensure that the crushed pineapple is distributed evenly throughout the batter, gently fold it in.

Pour the batter into the loaf pan, then level the surface with a spatula.

Now bake it for around 50 min, until a tester inserted into the center of the cake comes out clear. If the top browns too rapidly, enclose it with aluminum foil.Once baked, remove the pineapple bread from the oven and allow it to settle for approximately 10 minutes in the pan. Before dicing, place it on a wire rack to chill entirely.

You can slice the pineapple bread and serve it plain, or you can spread it with butter or cream cheese for an extra indulgent flourish.
RECIPE NOTES:
To prevent the bread from absorbing too much liquid, properly drain the crushed pineapple before using it.
