Prep the Oven and Pot
Preheat your oven to 325°F (165°C). Use a heavy Dutch oven or a deep baking dish equipped with a tight-fitting lid (or heavy-duty aluminum foil).

Season the Roast
Place the roast beef directly in the center of the pot. Sprinkle both the au jus mix and the dry French onion soup mix evenly over the top and sides of the meat.

Add Liquid
Pour 1 to 1.5 cups of water (or beef broth) carefully around the base of the roast, being careful not to wash all the seasoning off the top of the meat.

Slow Bake
Cover the pot tightly with the lid or double-layered foil to lock in all steam. Bake for 3 to 3.5 hours, or until the beef is pull-apart tender when tested with a fork.

Rest and Shred
Transfer the roast to a cutting board and let it rest for 10 minutes before shredding or thinly slicing across the grain. Skim any excess fat from the liquid remaining in the pot—this is your rich, warm au jus sauce for dipping.
Serving Ideas
Pile the juicy, shredded beef onto warm French rolls or hoagie buns topped with melted provolone cheese for classic French Dip sandwiches. Serve the extra au jus in small ramekins on the side for dipping, or spoon the meat and juices over a bed of creamy mashed potatoes
