Polish Stuffed Cabbage Rolls (Gołąbki) — A Family Recipe Passed Down with Love

There is something truly special about a recipe that travels through generations, crossing borders and bringing warmth to every kitchen it touches. These Polish stuffed cabbage rolls, known as Gołąbki, are exactly that kind of dish. Tender cabbage leaves are wrapped around a hearty filling of seasoned ground meat and rice, then baked low and slow in a rich tomato sauce until everything melds together into pure comfort food magic.

This recipe has been a household staple for good reason — it is deeply satisfying, surprisingly straightforward, and tastes even better the next day. Whether you are cooking for a crowd or simply craving something soul-warming, these cabbage rolls will not disappoint. Let me walk you through every step just the way it was taught to me.

Ingredients

  • 1 large head of green cabbage
  • 500g (about 1 lb) ground pork (or a mix of pork and beef)
  • 1 cup uncooked white rice, parboiled for 10 minutes and drained
  • 1 medium onion, finely grated or minced
  • 2 cloves garlic, minced
  • 1 egg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon marjoram (traditional Polish touch)
  • 2 cups crushed or pureed tomatoes
  • 1 cup beef or chicken broth
  • 1 tablespoon butter
  • 1 teaspoon sugar (to balance the tomato sauce)
  • Fresh parsley, chopped, for garnish

Method

  1. Bring a large pot of salted water to a boil. Carefully remove the core from the cabbage using a sharp knife. Lower the whole head into the boiling water and cook for about 3 to 4 minutes. As the outer leaves soften, gently peel them off one by one using tongs. Set the leaves aside on a clean towel to cool and drain. Repeat until you have 12 to 14 good-sized leaves.
  2. In a large mixing bowl, combine the ground meat, parboiled rice, grated onion, minced garlic, egg, salt, pepper, and marjoram. Mix well with your hands until everything is evenly incorporated. Do not overwork the mixture — just combine until uniform.
  3. Lay a cabbage leaf flat on your work surface. Place about 2 to 3 tablespoons of the meat filling near the base of the leaf. Fold the sides inward, then roll tightly from the bottom up, just like a burrito. Repeat with all remaining leaves and filling.
  4. Preheat your oven to 175°C (350°F). In a small saucepan, melt the butter over medium heat. Add the crushed tomatoes, broth, and sugar. Stir and let it simmer for 5 minutes. Season with salt and pepper to taste.
  5. Spread a small amount of the tomato sauce across the bottom of a deep baking dish. Arrange the cabbage rolls seam-side down in a single layer. Pour the remaining tomato sauce generously over the top, making sure each roll is well covered.
  6. Cover the dish tightly with foil and bake for 1 hour and 30 minutes. For the last 15 minutes, remove the foil to allow the tops to caramelize slightly and develop that beautiful golden color you see in the image.
  7. Remove from the oven and let the rolls rest for 10 minutes before serving. Spoon the rich pan sauce over the top and finish with a generous handful of freshly chopped parsley.

Tips for the Best Results

Use parboiled rice rather than fully cooked rice in the filling. The rice will continue cooking inside the rolls as they bake, and starting with fully cooked rice can make the filling mushy. Parboiling for just 10 minutes gives you the perfect texture in the end.

If your cabbage leaves tear during peeling, do not worry — simply overlap two smaller leaves to create one usable wrapper. Nobody will notice once the rolls are baked and sauced.

For an even deeper flavor, some Polish cooks line the bottom of the baking dish with leftover shredded cabbage before placing the rolls on top. This creates a soft, savory bed that soaks up all the juices and is absolutely delicious served alongside the rolls.

Storing and Reheating

Leftover cabbage rolls keep beautifully in the refrigerator for up to 4 days in an airtight container. Reheat them gently in the oven at 160°C (325°F) with a splash of broth or tomato sauce to keep them moist. They also freeze wonderfully for up to 3 months — simply thaw overnight in the fridge before reheating.
