Chocolate Coconut Almond Layer Cake — The Showstopper You’ll Make Again and Again

There are cakes you bake on a Tuesday just to get through the week, and then there are cakes like this one — tall, dramatic, and draped in toasted coconut and glossy chocolate ganache, with a creamy coconut filling tucked inside that makes every bite feel like a little celebration. This is absolutely the latter.

One look at this beauty and you already know it belongs at a dinner party, a holiday gathering, or any occasion where you want people to stop mid-conversation and say, “Wait — did you make that?” The answer, proudly, will be yes. And here is exactly how you do it.

Ingredients

For the Chocolate Cake Layers

  • 2 cups all-purpose flour
  • 1 and 3/4 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon fine salt
  • 2 large eggs, room temperature
  • 1 cup buttermilk
  • 1 cup strong brewed coffee, cooled
  • 1/2 cup vegetable oil
  • 2 teaspoons pure vanilla extract

For the Creamy Coconut Filling

  • 1 cup heavy whipping cream
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 and 1/2 cups sweetened shredded coconut
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract

For the Chocolate Ganache

  • 12 oz semi-sweet chocolate chips or finely chopped chocolate
  • 1 cup heavy cream
  • 2 tablespoons unsalted butter
  • 1 tablespoon light corn syrup (for shine)

For the Toasted Coconut Coating

  • 2 and 1/2 cups sweetened shredded coconut
  • 2 tablespoons butter
  • A small handful of whole almonds for garnish

Method

Step 1 — Bake the Chocolate Cake Layers

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans, then line the bottoms with parchment paper.
  2. In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt until well combined.
  3. In a separate bowl, whisk together the eggs, buttermilk, cooled coffee, vegetable oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix with a hand mixer or stand mixer on medium speed for about 2 minutes until smooth. The batter will be thin — that is perfectly normal and exactly right.
  5. Divide the batter evenly between the two prepared pans and bake for 32 to 38 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the cakes to cool in the pans for 15 minutes, then turn them out onto wire racks and cool completely before filling.

Step 2 — Make the Coconut Cream Filling

  1. Beat the softened cream cheese with powdered sugar until smooth and fluffy, about 2 minutes.
  2. In a separate bowl, whip the heavy cream to stiff peaks.
  3. Gently fold the whipped cream into the cream cheese mixture until combined and airy.
  4. Stir in the shredded coconut, vanilla extract, and almond extract. Refrigerate until ready to use.

Step 3 — Toast the Coconut Coating

  1. In a large skillet over medium heat, melt the butter and add the shredded coconut.
  2. Stir constantly for 5 to 7 minutes until the coconut turns a deep golden brown. Watch it carefully — it can go from golden to burnt very quickly.
  3. Spread the toasted coconut onto a sheet of parchment paper and allow it to cool completely.

Step 4 — Make the Chocolate Ganache

  1. Heat the heavy cream in a small saucepan over medium heat until it just begins to simmer. Do not boil.
  2. Pour the hot cream over the chocolate chips in a heatproof bowl. Let it sit for 2 minutes undisturbed.
  3. Add the butter and corn syrup, then stir slowly from the center outward until you have a completely smooth, glossy ganache.
  4. Allow the ganache to cool at room temperature for about 20 to 30 minutes, stirring occasionally, until it thickens to a pourable but not runny consistency.

Step 5 — Assemble the Cake

  1. Place the first cake layer on a serving
