Instructions

Cook the pasta – Boil spaghetti according to package directions until al dente. Drain and set aside.

Sauté veggies & beef – In a large skillet, heat olive oil over medium-high heat. Add onion and bell pepper, sauté for 3–4 minutes until softened. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess grease.

Make the sauce – Return beef to the skillet and sprinkle in taco seasoning. Stir in undrained tomatoes with green chilis, beef broth, sour cream, and 1 ½ cups of the cheese. Let the mixture simmer on low until the cheese melts into a creamy sauce.

Combine & finish – Add the cooked spaghetti to the skillet, tossing until pasta is coated in the cheesy taco sauce.

Serve & enjoy – Top with the remaining cheese, fresh cilantro, or jalapeño slices for extra flavor. Serve hot!
