  1. Prep the Berries: Wash your strawberries thoroughly under cold water. Slice off the green tops (hulls). If you have a few berries that are slightly overripe or bruised, throw them in—they are often the sweetest!

  2. Blend it Smooth: Add the strawberries, cold water, lemon juice, and your choice of sweetener (if using) into a blender. Blend on high speed for 60 to 90 seconds until the mixture is completely liquefied and frothy.

  3. Strain the Pulp: Place a fine-mesh strainer over a large pitcher. Pour the blended strawberry liquid through the strainer. Use the back of a ladle or a spatula to gently press the pulp, extracting every last drop of pure juice while leaving the seeds and heavy fibers behind. (Tip: For a crystal-clear juice, line the strainer with cheesecloth).

  4. Chill and Perfect: Give the juice a stir. Taste it—if your strawberries were exceptionally tart, you can whisk in a touch more honey at this stage. Pop the pitcher into the fridge to chill for at least an hour.
