Blueberry Cream Cheese Loaf: The Recipe Everyone Is Going Crazy Over
If you have ever walked past a bakery and been stopped dead in your tracks by the smell of something warm, fruity, and completely irresistible, then this blueberry cream cheese loaf is about to become your new obsession. With a golden, crackled crust bursting with plump blueberries and a soft, pillowy interior swirled with cream cheese, this loaf is the kind of bake that makes you feel like a professional pastry chef — even if it is your very first attempt.
The best part? It is surprisingly simple to make. Once you pull it out of the oven and catch that first wave of warm blueberry and sweet dough aroma drifting through your kitchen, you will completely understand why people cannot stop talking about it. Fair warning: you will find yourself crouching in front of the oven window far more than is considered normal.
Ingredients
- 3 cups all-purpose flour, plus extra for dusting
- 2 teaspoons instant yeast
- 1 teaspoon salt
- 2 tablespoons granulated sugar, plus extra for topping
- 1 cup warm water (around 110°F / 43°C)
- 2 tablespoons olive oil or melted butter
- 1 teaspoon vanilla extract
- 1 and a half cups fresh blueberries (or frozen, thawed and drained)
- 8 oz (225g) full-fat cream cheese, softened
- 3 tablespoons powdered sugar
- 1 egg (for the cream cheese filling)
- Zest of one lemon
Method
- In a large mixing bowl, combine the flour, instant yeast, salt, and granulated sugar. Stir everything together until well mixed.
- Add the warm water, olive oil, and vanilla extract to the dry ingredients. Mix until a shaggy dough forms, then turn it out onto a lightly floured surface and knead for about 8 to 10 minutes until smooth and slightly tacky. Alternatively, use a stand mixer with a dough hook on medium speed for 6 minutes.
- Place the dough in a lightly oiled bowl, cover with a clean tea towel or plastic wrap, and allow it to rise in a warm spot for 1 to 1.5 hours, or until doubled in size.
- While the dough is rising, prepare the cream cheese filling. In a bowl, beat together the softened cream cheese, powdered sugar, egg, and lemon zest until smooth and creamy. Set aside.
- Once the dough has risen, gently punch it down and turn it out onto a floured surface. Roll it out into a rough rectangle about half an inch thick.
- Spread the cream cheese mixture evenly over the dough, leaving a small border around the edges. Scatter the blueberries generously over the cream cheese layer.
- Carefully fold and roll the dough over itself, tucking in the blueberries as you go, and shape it into a round ball. Some blueberries will peek through the surface — this is exactly what you want.
- Line a round proofing basket or a bowl with parchment paper and place the shaped dough inside, seam side up. Cover and let it rise again for 45 minutes to 1 hour.
- About 30 minutes before baking, place a Dutch oven with its lid inside your oven and preheat to 450°F (230°C).
- Carefully tip the dough out onto a piece of parchment paper so the smooth side faces up. Sprinkle the top with a little granulated sugar for a beautiful, slightly crunchy crust. Score the top with a sharp knife or bread lame.
- Lower the dough (using the parchment paper) into the hot Dutch oven, replace the lid, and bake for 20 minutes. Then remove the lid and bake for a further 20 to 25 minutes until deep golden brown and the blueberries are bubbling and jammy.
- Remove from the oven and allow to cool on a wire rack for at least 30 minutes before slicing — if you can wait that long.
Tips for the Best Results
Fresh blueberries will give you the most vibrant colour and flavour, but frozen blueberries work beautifully too. Just make sure they are fully thawed and patted dry before using, otherwise excess moisture can make the dough soggy.
Do not skip the second rise. It is tempting when you are excited to get this loaf into the oven, but that extra proofing time is what gives the bread its gorgeous open texture and that impressive domed top.
The lemon zest in the cream cheese filling is a small addition that makes a huge difference. It brightens the flavour and keeps the cream cheese layer from feeling too heavy. You can also add a tiny pinch of cinnamon to the filling if you like a little warmth in your bake.
Serving Suggestions
This loaf is honestly incredible eaten warm, straight from the wire rack with absolutely nothing added to it. However, if you want to take things to the next level, a light spread of salted butter on a thick slice is truly next-level comfort food. It also pairs wonderfully with a hot cup of coffee or tea, making it the perfect centrepiece for a slow weekend morning.
Leftovers — if there are any — keep well wrapped at room temperature for up to two days, or in the fridge for up to four days. A quick 10-second warm-up in the microwave brings it right back to life.
