Techniques That Make the Difference
1. The Gentle Boil
Rather than aggressively boiling eggs for 15 minutes—which leads to rubbery whites and a sulfurous green rim around the yolk—start the eggs in cold water, bring them to a rolling boil, turn off the heat, cover, and let them sit undisturbed for exactly 12 to 13 minutes. Plunge immediately into an ice bath to stop cooking.
2. Pass Through a Fine-Mesh Sieve
This is Martha Stewart’s non-negotiable step. Mashing yolks with a fork always leaves small lumps. Pushing room-temperature cooked yolks through a fine-mesh sieve or ricer breaks the protein down into a light, flour-like powder before any liquids are introduced.
3. Emulsify Slowly
Whisk the sieved yolks with mayonnaise, Dijon, and citrus juice gradually. This creates a stable emulsion similar to a delicate mousse rather than a dense paste.
