Ingredients:
6 pork chops
8 slices of potato
1 sliced onion
6 tbsp butter
7 tbsp extra virgin olive oil
3 cups chicken stock
2 1/2 cups grated cheddar cheese
2 cups milk
2/3 cup all-purpose flour
1/4 cup chopped chives
Salt, pepper, and 1 tsp granulated garlic to taste
Instructions:
Preheat the oven to 350°F. Soak potato slices in cold water to eliminate starch. This step can be done a few hours in advance.
In a skillet, melt 4 tbsp butter and 4 tbsp olive oil over medium-high heat. Add onions and cook until caramelized. Sprinkle flour over the onions.
Pour in chicken stock and milk, stirring until the mixture thickens. Season to taste, then stir in cheese and chives. Remove from heat once the cheese melts.
Grease a casserole dish. Drain the potatoes and layer them, followed by the cheese sauce. Repeat the layers.
Bake for 20 minutes.
For the pork chops: Combine flour, garlic, salt, and pepper. Coat each pork chop. In a skillet, heat 2 tbsp butter and 3 tbsp olive oil over medium-high heat. Brown the pork chops (4-5 mins per side).
Place the pork chops over the potatoes and bake for an additional 40 minutes until bubbly and golden.
Optional: Garnish with extra chives.
